Yields1 Serving
 500 g organic minced meat
 1 organic medium onion (chopped)
 2 med carrots organic (no need to wash just Chop)
 1 stick of celery (washed and chopped)
 4 - 6 cloves of garlic crushed
 1 cup of frozen peas.
 ½ cup of chopped fresh herbs or (2 tbl sp of dried) *I use chives, fennel, parsley).
 2 med sweet potatoes (wash, Peel & slice)
 2 reg white potatoes (wash, Peel & slice)
 500 ml of tomato pasata or 2 tlb sp tomato pure
 Pinch of Cracked black pepper & Pink Himalayan Salt.

1. Gather all ingredients, equipment and turn oven on 180’C -200’C.
2. Cook the meat and the onions in the tray on the hob at medium heat for
2 minutes.
3. Add the chopped carrots, celery, garlic, herbs and stir for 1 min.
4. Add the pasata, the stock, peas and salt and pepper, stir for 1mim.
5. Turn off heat and layer in the potato on top, pressing them into the meat mixture until the entire tray in covered. You can cover the tray for 15 min with thin-foil or grease proof paper, and then remove for the remainder 30 min.

Nutritional information

Sweet potato has a low GI and is rich in beta-carotene. While most
cottage pies are low in veggies, I pack them in here for a healthier
option and a quick one tray dinner. (Less wash up!!!!!)
Mum’s love this dish as it is a great option for fussy eaters, as the
sweet potato and the mince disguise the extra veggies!!!!
Cooking the meat without extra oil makes this dish heart friendly.
The natural fat in the meat is enough to fry the onion. This reduces
the extra fat with could be damaged the oil and create free radicals.

Also cooking all the one tray keeps all the vitamins and minerals form
going down the skin. If you are eating this in the summer I serve it
with a side salad, this add colour and makes it a little lighter to eat.
